Program description

The Healthy Catering program (HC) makes healthy choices available to our catering guests. We are excited to provide new nutritious and exciting menu options for everyone.
The Healthier Catering menu is rich in whole grains, vegetables and fruits, with foods and beverages which are low in sugar, sodium, saturated fat and free of trans fats. The menu aligns with the US Dietary Guidelines for Americans and was developed using guidelines from the Partnership for a Healthier America's Healthier Campus Initiative. The Partnership for a Healthier America strives to "make the healthy choice the easy choice." SUNY Cortland has been a Healthier Campus Initiative partner since
2016.

 

Taste to Go

Taste to Go is easy to order, easy to enjoy and easy on your budget! We package Taste to Go orders so that you can easily pick them up and transport them to your event.

A trash bag is provided with each order. Please be sure that trash is placed in or next to the nearest trash container. Please be sure to honor all no food or beverage allowed postings by keeping your service to those areas dedicated to food and beverage service.

Takeaway Boxed Lunches

Sandwich Box Lunch $8.50 per person:  Includes multi-seed chips, an apple, whole wheat cookie, condiments, and bottled water. Sandwich choice:

  • Takeaway Chicken Salad Sandwich: tarragon chicken salad with celery, almonds, grapes, leaf lettuce, on 9-grain whole wheat bread
  • Takeaway Tuna Salad Sandwich: tuna salad, avocado, sliced tomato and lettuce on 9-grain whole wheat bread
  • Takeaway Vegetarian: homemade hummus, cucumbers, avocado, red peppers, tomato, lettuce, on 9-grain whole wheat bread   

Takeaway Salad Box Lunch $9.50 per person: Includes multi-seed chips, an apple, whole wheat cookie, condiments and bottled water. Salad Choice:

  • Takeaway Harvest Salad: field greens, crisp romaine, dried cranberries, fresh pears, toasted pecans, with balsamic vinaigrette
  • Takeaway Quinoa Salad- tricolor quinoa with peaches, diced apples, golden raisin, garbanzo beans, pecans, and green scallions

Full-Service Catering

(Minimum 20 guests. Maximum 2 hours of service.)

Healthy Catering Breakfast

Start the day off right with breakfast. Our breakfast buffet setups are attractively displayed with the necessary service ware and condiments.

  • Sunrise mini breakfast: $5.95 per person: regular and decaf coffee, hot tea, apple juice, iced water, whole wheat cookie and cut fresh fruit
  • Healthy Start: $3.99 per person: hot oatmeal, dried cranberries, golden raisins, diced apples, diced strawberry, blueberries, toasted almonds, honey and almond milk

Add-ons        

Add on any of the following (pricing per person):        

  •     Cut Fruit      $1.95
  •     Yogurt      $2.15
  •     Assorted Hand Fruit      $1.50

Healthy Catering Lunch

(Minimum of 20 Guests)

Sandwich Platter $8.85 per person: A platter of assorted sandwiches. Includes cut fruit, whole wheat cookie and bottled water

  • HC Vegetarian: homemade hummus, red peppers, cucumbers, avocado, tomato, lettuce, on 9-grain whole wheat bread
  • HC Tuna Salad: tuna salad with avocado, celery, onion in Boston lettuce wrap
  • HC Tarragon Chicken: tarragon chicken salad sandwich with celery, almonds, grapes, leaf lettuce, on 9-grain whole wheat bread

HC Lunch Buffet $11.25 per person: includes pre-made sandwiches, choice of 2 side salads, cut fruit, and bottled water.

  • HC Vegetarian: homemade hummus, roasted red peppers, tomato, lettuce, on 9-grain whole wheat bread   
  • HC Tuna Salad: tuna salad with avocado, celery, onion in Boston lettuce wrap 
  • HC Tarragon Chicken: tarragon chicken salad sandwich with celery, almonds, grapes, leaf lettuce, on 9-grain whole wheat bread

Choice of Two Side Salads Selections: Mediterranean Salad, Quinoa Salad, mixed green salad with oil and vinegar, cut fruit

HC Salad Buffet $10.25 per person: Includes rolls, ice tea and water. 

  • Mini Salad Bar: spring mix, Romaine, shredded carrots, sliced cucumbers, tomatoes, black beans, peas, toasted almonds, diced avocado, edamame, quinoa, fruit, honey balsamic vinaigrette

Healthy Catering Dinners

(Minimum of 20 guests)

Plated Meals

Tabled-Served Dinner: table-served dinners are served with one or two entrees, choice of green salad, two accompaniments, dinner rolls, dessert, ice tea and water. If two entrees are selected, the exact number of each entree must be guaranteed five days before the event.

Entrees:

  • HC Honey Lime Salmon  $24.75 per person: seared salmon with a honey lime glaze
  • HC Beef Pepper Steak $21.50 per person: beef with peppers, onions, and water chestnuts
  • HC Artichoke and Sun-dried Tomato Pasta $21.50 per person: whole wheat pasta, with sun-dried tomato, Kalamata olives, and artichokes in a wine sauce

Choose one green salad: mixed green salad, field greens with Balsamic Dressing                    
    
Choose two accompaniments: 

  • Vegetable: seasonal medley, fresh green beans, roast asparagus, steamed broccoli, sautéed zucchini and yellow squash, roasted root vegetables                           
  • Starch: wild rice pilaf, brown rice, roasted potatoes, roasted fingerling potatoes

Choose one dessert: angel food cake with yogurt and berries, berry parfait, fresh fruit, mixed berries               

Healthy Catering Buffet Selections

(Minimum of 20 guests.)   

1 entrée $17.25 per person or 2 entrees for $20.50 per person

Dinner buffets served with entree, choice of green salad, two accompaniments, dinner rolls, dessert ice tea and water.

Entree:

  • HC Artichoke and Sun-dried Tomato Pasta: whole wheat pasta, with sun-dried tomato, Kalamata olives, and artichokes in a wine sauce    
  • HC Honey Lime Salmon: seared salmon with a honey lime glaze
  • HC Beef Pepper Steak: beef with peppers, onions, and water chestnuts
  • HC Balsamic Chicken and Tomato: with plum tomatoes, balsamic glaze and lemon beurre blanc sauce   

Choose one green salad: mixed green salad,  field greens with balsamic dressing and oil and vinegar

Choose two accompaniments:

  • Vegetable: seasonal medley, fresh green beans, roast asparagus, steamed broccoli, sautéed zucchini and yellow squash, roasted root vegetables

Healthy Catering Receptions

(Minimum of 20 guests.)   

Receptions include infused fruit water and ice tea.

One Platter: $4.85 per person
Two Platters: $7.15 per person
Three Platters: $9.15 per person

Platter Choices: 

  • cut seasonal fruit platter
  • vegetable crudité and Tzatziki dip
  • hummus and roasted vegetables
  • yogurt and blueberry stuffed strawberries
  • tortilla chips with black bean and corn salsa

Tequila lime jumbo shrimp  Substitute $1.50 or add $2.75
